Great vegetarian meal for a guy?

ok, so im seeing this guy and he is a vegetarian, i am a chef actually but vegetarianism is like out or this world for me, i want a to cook him a meal that will be awesome i do have tons of side dishes ideas, salads, etc but really what does a vegetarian eats as a main dish that its delicious and fulfilling, this is hard for me since my culture does not embrace vegetarianism at all so i dont know what to do please i want something more exciting than pasta, so please vegetarians our there give me ideas
